This was an interesting and tasty experiment for me, and I think it turned out really good! I made this using a whole orange but I think that this would be even better if you just used fresh orange juice instead, so I’ll leave you the adjusted recipe.
2/3 Cup Unsweetened Coconut Milk
1/3 Cup Fresh Squeezed Orange Juice (with a lil’ pulp)
1 tsp. Pure Vanilla Extract
1/2 tsp. Agave Nectar (add a little more to your liking)
A pinch of Orange Zest
3 Tbsp. Chia Seeds
1 Tbsp. Dried Coconut to mix in, another for topping
Mix all ingredients in resealable jar/container/cup and make sure it is thoroughly mixed either by shaking or stirring. Set in refrigerator overnight, sprinkle on some more coconut in the morning and enjoy for breakfast!
