And the last post for Raw Wednesday today, is an energizing soup that I made for dinner. You’d be surprised by how filling one serving of this is! Really, you can make this type of soup using any produce in your refrigerator, but below is how I did it.
Makes 3-4 Servings
Half of 1 Large Cucumber (sliced)
1 Bell Pepper (chopped)
3 Tomatoes (chopped)
1 Cup of Spinach
2/3 Cup Fresh Basil Leaves
1 Whole Leek (white & green parts, chopped)
2 Cloves of Garlic
1 Tsp. Sea Salt
1/2 Tsp. Fresh Ground Pepper
1/2 Cup Cashew Spread (used from this recipe)
Put all fresh ingredients into a blender (you may have to do it in two parts depending on your blender size), puree completely. Add in salt, pepper and cashew spread, blend completely then season to taste. Serve with a dollop of cashew spread on top.
