Cucumber Mint Sorbet (or nearly shaved ice in this case) ;]

What do you do when the summer heat is getting to you and you happen to have a ton of cucumber in your refrigerator? Make a subtle sweet sorbet, of course! I used a recipe from The Catskill Kiwi, except that instead of making a mint-sugar syrup, I muddled mint leaves in 3/4 Cup of Agave Nectar. I also, couldn’t find an ice cream maker, so I just blended it all up and let it set overnight. It’s a cool treat, and doesn’t feel too heavy; my next endeavor will be to make some cucumber alcoholic treats! 😀
