Juice Pulp & Flaxseed Crackers

Now there is a solution as to what to do after you’ve made a veggie juice! These raw crackers use the leftover pulp mixed with seasonings and ground flaxseed to make crispy, healthy treats. Pictured: I ate them with a Sundried Tomato Garlic Basil dip that I got from the farmer’s market. Yummy!

Flaxseed

Ingredients:

1/2 Cup Veggie Pulp (from Cool Cucumber Carrot Juice)

1/2 Cup Ground Flaxseed

1 Cup Water

2 tsp. Italian Seasonings (Next time I’m going to use fresh basil!)

1/4 tsp. Sea Salt

Directions:

Mix all ingredients in a bowl, let sit for a couple of minutes to let the flaxseed absorb some of the water. Stir again and then spread onto a dehydrator tray with teflex sheet, into a layer about 1/8” to 1/4” thick. Dehydrate at 105F for 4 hours then turn over without the teflex sheet and dehydrate for another 2-4 hours. Once they are crunchy, break them apart and try not to eat them all in one sitting like I did! (Also, sorry for the poor quality of the photo! I ate them too fast!)
