You guys! It’s finally time! I posted about receiving a copy of Emily Von Euw’s new un-cookbook, Rawsome Vegan Baking, on instagram a few weeks ago and now I’m ready to share a delicious recipe from it with you. But, first, let me tell you a tid bit about what I think of this raw dessert masterpiece!
Firstly, Emily’s photos are incredibly beautiful and will definitely make you drool, and it seems like there is a photo for nearly every single recipe (which I love). She has sinful-looking cupcakes, tons o’ tarts and small-bite recipes that will healthily tide your sweet tooth over. The best part of all is that the recipes are mostly really easy to make! A couple use a dehydrator, but it’s nothing crazy.
So, if you’re thinking about dabbling in the art of Raw Dessert Making, you should definitely check this book out! Lucky for you, I’m giving a copy away to the fortunate reader that wins the contest below. 😀 Oh, and for the record, I made this recipe by halving it and placing it into two mini-tart pans. It was fantastic!
Apparently, I’m feeling pretty Spring-y over here! First, it was the Berry Pineapple Waffles, now these beautiful Mango Cakes? A girl can dream, right? Although I would be lying if I said that I wasn’t excited for the rain we’re supposed to get, this weekend. Drought-be-damned! Maybe I’ll put together a tasty, warming soup..
But, until then, check out these easy, healthy, sweet and supremely tasty raw cakes. Of course cake is a bit of a stretch, but it’s cake-shaped so just go with it. 😉 This recipe gives you a chance to use up some of that great Winter citrus to add some sour to this sweet dessert. An added plus is that this isn’t a totally nut-based, raw dessert; I did put coconut it in for some creaminess and texture, but not enough to make it high-fat (in case you’re worried about that type of thing).

Originally, I thought that January would be a month of leveling out from the holidays, but for some reason I’ve found that this month has been filled with all kinds of events, birthdays, dinners and the like. Not to mention, I’m working on the photos for Lindsay’s (Happy Herbivore) next cookbook and have been very busy with that. I’m really excited for this one and think that it will be even better than the last!
Some other things that inevitably come with January are people trying to eat better and be more physically active. This means that you may find yourself needing to recuperate after an awesome workout sooner than later. I have just the smoothie for you! Naturally sweetened with dates, combined with bananas and rich cacao nibs, plus a little vanilla to perfect it. It’s creamy, but not too thick and has a rich flavor.
Loaded with potassium for hydration and carbohydrates for regeneration, it’ll help you out, big time. This is probably where I should mention that this smoothie is also great for hangovers ;). Plus, recovery drinks are important for drinking right after work outs because they reduce fatigue and prolonged muscle soreness. Just make sure to enjoy it right after your workout!
I am finally feeling like the holidays are truly here. Mostly because my family and I just got our Christmas tree this past weekend and I decorated it most of Saturday, wrapped some presents that night and tucked them under the tree Sunday morning. Oooh, sparkly. To be honest, I’m not religious. I do enjoy celebrating certain holidays and I really like giving people gifts, even if it is just a big batch of cookies.
Something that I also find fun is going to holiday parties, although Corey hates it so that is sometimes hard to negotiate. Either way, socializing and eating delicious food is a great time to me, and if I get to wear gaudy Christmas sweaters while doing so, even better!
Speaking of delicious eats and the holidays, I saw this idea for Cheesecake Shooters from The Pioneer Woman and just knew that I had to do my own interpretation of it. This means that I needed to up the portion size just a tad and use infinitely healthier ingredients. Some of you may have made my raw desserts in the past, so imagine one of those recipes and cut the waiting time by 75%. Crazy easy, right?
This “cheesecake” is naturally sweetened with dates, coconut sugar and a touch of maple syrup. No processed sugar here! Now, you have another way to use those persimmons that you keep getting in your CSA baskets! Make these for your next holiday party, and if you’re worried about breaking stem-ware get some small plastic cups and do it up.
