Sriracha-Cauliflower Mac ‘n’ Cheeze

Some of you may be familiar with Randy Clemens as the author of The Sriracha Cookbook as well as the even better Veggie-Lover’s Sriracha Cookbook. Not only that, he is a chef, craft beer nerd and has helped put together the Sriracha Festivals in LA and SD, and taken part in the documentary on sriracha. You could certainly say he knows his shit.

I’ve also mentioned Randy a couple of times on the blog before, like when he had his book release party at Golden Road Brewing in July of 2013 and we got to hang out and take goofy pictures, plus sample some dishes from the Veggie-Lover’s Sriracha Cookbook. Almost a year later, he participated in Authors Worth Celebrating at Mohawk Bend where we got to have a 4-course meal made up of even more dishes from his book.

Needless to say, I’ve had my fair share of his dishes and they are damn good. That being said, I just had to get him involved with #ReturnoftheMacMoFo, because I have been eyeing his recipe for Sriracha-Cauliflower Mac for over a year now. Randy has been so awesome as to not only let me share this delicious recipe, but to also give THREE SIGNED COPIES of his Veggie-Lover’s cookbook away! YAY!

Cauliflower Scramble

I’m so pleased to introduce everyone to Christine Oppenheim of Veggie Fixation, today! Christine is an uber-creative, allergy-friendly, vegan chef that comes up with some amazing dishes. She puts on informative cooking classes in the Southern California Area, while also being a personal chef to many lucky people. Vegan Cauliflower Scramble

I love scrolling through Vegan Yack Attack and drooling over all Jackie’s amazing photos. I mean, seriously, the girl’s got talent. Her food is super creative and her photography is gorgeous, to boot. I’m honored to be guest posting for her.

When I first met Jackie over dinner at Native Foods, I remember being almost a little awe-struck to meet a blogger I really admire.

We immediately hit it off, chatting about our vegan journeys, and, of course, our shared love for food. After all, we were at a meeting to discuss the vegan food tours we were giving throughout Los Angeles with the now defunct Urban Food Crawl.

One of the topics that came up was my dietary restrictions, and specifically, my avoidance of soy. (I can have small amounts, like tamari or miso, but my digestion doesn’t tolerate anything more than that.) A number of my clients can’t have soy, as well, so it’s always a fun challenge coming up with alternatives.

Since going soy free, one thing I’ve missed most is a good breakfast scramble. Sure, I make chickpea quiche like they are going out of style, but it’s just not the same. I tried Living Harvest tempt hemp tofu once, thinking I had found the Holy Grail. However, as delicious as it was, that product really is ever so elusive. It’s only been sighted at one Whole Foods near me and more often than not, it is sold out.

I was about to resign myself to never having a proper scramble again when I dreamed up the missing link…

Cauliflower!

It’s been a great substitute or alternative for so many other delicious things – Buffalo wings, Alfredo sauce, pizza crust – why couldn’t it stand in for tofu as well.

Turns out, it’s a perfect partner to a morning sweet potato hash. I’ll be making cauliflower scramble over and over and over. That vegan quiche may just have a run for its money.

Cauliflower Fried Rice

Another week, another stellar guest blogger, and today I’m thrilled to have Nicole from A Dash of Compassion share a recipe with all of us! She takes beautiful pictures, plus has some mind-blowing recipes on her blog. Not to mention, Lisa Pitman and her have put together some great eBooks, like Edible Gifts (all vegan)! So, without further ado, here is her tantalizing recipe for Cauliflower Fried Rice. :)

Cauliflower Fried Rice

Ah, January, the first month of the year is already drawing to a close. As completely amazing as 2013 was, I have big plans and long lists to accomplish for this year. It’s a fresh new start and I’m excited about what’s to come.

With so much going on, I’m embracing 2014 with simplicity on the food front. I adore one-pot meals that are delicious yet realistic and achievable with busy schedules. Brown rice with colourful stir-fried veggies is a staple in my house, but I’ve recently discovered grated cauliflower to replace rice for a more nutritious and vegetable-packed meal. Have you tried it yet? I have to say, it is incredible and super simple.

Cauliflower Fried Rice

If you own a food processor, this is the time to use it. Simply pulse the cauliflower into rice-sized pieces and then throw it into a pot with other stir-fried veggies and you’re good to go! This particular “fried rice” recipe also makes use of smoked tofu, shiitake mushrooms, edamame and kale, along with the fresh flavours of ginger, tamari and sesame oil to round out the dish. To cut down on the oil for frying the vegetables, I prefer using veggie broth to add more flavour.

Quinoa Cauliflower Bowl with Almond Sriracha Sauce

Straight up, Richa from Vegan Richa is one of my favorite vegan bloggers. She is insanely talented as you can see by her beautiful photos and her creative recipes, and I’m pretty sure that she enjoys spicy food as much as I do (Hello Sriracha!). In short, I am super thankful for her being able to guest blog for you all to see; and if you don’t go over to her site you are seriously missing out!

Ok, so its January. and everyone seems to be talking about cleanses, eating healthy and what not. And I am like, let me just stop some of that sugar craving that I picked up over the holidays and I am good to go. I think it is a bit easier for me and most Indians in general because we are more addicted to salt and spice! Savory food hell yes.

Any which way, I digress. When people ask me or hubbs about what we eat, most times they auto-complete the answer to Salads. This is quite odd, because I eat hearty salad meals probably less than once in a month and hubbs probably once a week at work. That is quite infrequent, no? Raw leafy greens is something I rarely enjoy in huge quantities. They just do not agree with my tummy. So this is what I do with them and the way I love them. This delicious bowl of roasted cauliflower (croutons!), grains or lentils(protein!) and lightly cooked greens is my idea of a salad.:) Oh yes, did I forget to mention Sriracha almond coconut sauce (Spice!).

All healthy, light and delicious.
