Do you ever have those days where you’re starting out with an awesome recipe idea, and then it keeps morphing? Yesterday was definitely one of those days, for me. I knew that I wanted something minty, chocolatey and green so share with you all, but wasn’t sure about just which way to do it.
First, it started out as a cookie; minty, green and lil’ chocolate chips. But, after seeing the consistency of the dough I thought that maybe this was better suited to be a muffin. So, I baked a couple of test muffins. As good as they were, I knew that they needed something else, a little more of a minty kick. Let there be glaze! A minty sweet glaze was then poured over the top and I adjusted the recipe some more so that it would be a fluffier cupcake.
You better believe that I was in a sugar/carb coma after all that taste testing. But, I will do what I must for you! Even if that means a couple of extra work outs this week. So, now, we have an adorable cupcake that is perfectly suited for St. Paddy’s day! Plus, there’s veggies in it, spinach to be exact; that’s what gives these cuties their terrific color.
Who doesn’t love a smoothie? They are insanely easy to make, (usually) a healthy meal choice, and really hard to mess up! Although, I say that now, and the next time I make a smoothly it’s going to end up awful. How can you go wrong with berries and bananas, though? Add in some greens and a little coconut and you have the perfect breakfast.
I’m going to need to stock up on some healthy recipes for the rest of the week, because this Saturday may just be a disaster. Why, you ask? The 3rd Annual LA Vegan Beer Fest. I went last year and did a couple of posts on it, and had an amazing time; so, I am very excited for this weekend and look forward to hanging out with cool vegans/vegan enthusiasts/beer lovers. For me, it doesn’t get much better than that.
Back to the healthy part of this post, the recipe! Also, I’ve been inspired by a couple of other blogs (mostly Smitten Kitchen), and am going to start linking back to past recipes for each year; this is about to get embarrassing.
It’s the day after Valentine’s Day and I hope that each and every one of you had a good, if not great, day. Mine was filled with some yummy vegan food, more importantly, desserts! But, now, it’s back to being good and that’s why I have this delicious (but ugly) concoction of a smoothie for you!
This is the perfect smoothie to help you transition from decadent Valentine’s Day foods, back to healthier eating habits. It has luxurious, raw Cacao Powder that’s full of antioxidants, a banana for potassium and to use as a natural sweetener, chia seeds for fiber and protein, and kale which is a nutritional powerhouse in its own right; you can’t forget the orange for that boost of vitamin C. After the past week of spending time with family and celebrating the life of my grandmother, I’m certainly in need of a cleaner meal plan. I sometimes struggle with portion control and a balance of comfort food vs. healthier food when I’m not at home. When you’re in an emotionally charged environment, or possibly hungover , over-indulgence is almost guaranteed to happen.
Soon, I will be back at home, in a kitchen that I fully know my way around, with all of the herbs and spices I’m familiar with. Back on the healthy train, and back to the gym! Here to help jump-start that is this delectable smoothie. This recipe is pretty high volume, so it is extra filling, but is still light, creamy and sweet. After cooking all day long the last thing you want to do is put a lot of effort into another meal. That’s why I think this recipe may be of interest to students taking online culinary arts college classes, as well, because of how effortless it is!
Serves 1 Huge Smoothie, or 2 Smaller Ones
2 Cups Red Seedless Grapes
1 Cup Packed Greens- I used lettuce but Kale and Spinach are even better
1 Medium Pear, Cored & Chopped
1/2 Cup Frozen Pumpkin Pureé
2 Tbsp. Avocado
3/4 Cup Coconut Water
Optional: Ice Cubes
Place all ingredients into a blender and pureé until smooth! (This is why I love smoothies, so easy)
