Grilled Pineapple Salsa with Quinoa-Corn Tortilla Chips

A few weeks ago, I was creating recipes as a contributor to a cookbook that is all about quinoa. I felt pretty excited about being 1 of the 5 contributors and 1 of the 2 vegans that they included in the project! It was fun to get creative with recipes, and get away from the standard filled peppers and cucumber salads. One of the recipes I tried to create was for quinoa corn chips, this meant making your own tortillas from quinoa and masa harina, then making them into chips.

I didn’t have a tortilla press then and was really struggling with getting the tortillas thin enough and evenly shaped; they mostly looked like little hacked up Antarcticas. So, I gave up on that recipe and moved on. That being said, when I was contacted to do a review for a festive set of cooking tools (a press being one of them) I couldn’t resist signing on! It’s a win-win, right? Finally, I get a tortilla press in my kitchen along with a citrus reamer, avocado scooper/slicer, tortilla warmer, and two salsa bowls with cute lil’ feet.

It’d be really hard to not throw a fiesta with awesome food with all of those goodies! I especially love the tortilla press and the citrus reamer, which has little silicone parts for better grippin’ and squeezin’. All of these products come from IMUSA, where you can find more food gadgets and cookware for creating awesome food.

As for the recipe, can you really go wrong with grilled pineapple? The answer is, “Hell no!” and this time is no different. The grilled pineapple brings a caramelized sweetness to the salsa, where it plays with fresh tomatoes, red onions, lime juice and a bit of cilantro.

The chips are a little time-consuming, but are neat if you’d like to put a new twist on tortilla chips. Admittedly, I went straight in the oven with these so they are softer than the traditional chip. But, you can take the extra step of pan frying them with a little oil in a pan for a couple of minutes, before baking them to get them crispier. Lightly salt the crunchy, quinoa-corn chips right when they pop out of the oven and add a squeeze of lime for a subtle zing.

Refreshing Watermelon Tomato Salad

The weather earlier this week was insane! You want to talk about a scorcher?  I thought that I was back working Coachella! Thank goodness I could jump in a pool to cool off. 😉 I wish that I had this salad to cool me down from the inside out, though.

I was inspired by a salad that I had years ago, with watermelon, tomato, mint, and feta, plus some vegetarian roe for a salty kick. This one is slightly different, with creamy pine nuts changing up the texture, and a combination of mint and basil to make it interesting (and pretty!).

The best part about this salad is that it comes together in mere minutes. If you chill the tomato and watermelon before assembly it works out even better. This is the perfect side for a summer party, BBQ or as a light snack. Throw a little white balsamic vinegar on there and call it a day!

Vegan Memorial Day Recipes!

Need a little help thinking about what to make for Memorial day this year? Fear not! I have some great ideas for you that are extremely delicious and easy to make.

  1. Strawberry BBQ Sauce on a Tempeh Sandwich– A savory BBQ sauce with a hint of sweetness from ripe strawberries that you can use for all of your grilling needs.
  2. Spicy Mushroom Tacos in Soft Eggplant shells with Cheese Sauce– Forget using disposable utensils, just use your hands for these tasty tacos that have a kick to them.
  3. Grilled Portobello Burger with Caramelized Onions– Here is another dish that you can use on your grill, and with caramelized onions as a topping, you can’t go wrong.
  4. Beer Battered Zucchini Sticks & Onion Rings– Today is a holiday, why not break out the foods you wouldn’t normally indulge in. It’s paired with an amazing raw ranch dressing, that evens it out, right? 😉

  1. Slow Cooker Black Bean Soup– This soup is great by itself or served with some of your favorite tortilla chips, plus it’s easy to self-serve when it is cooking in the crock pot!
  2. Creamy Greek Summer Salad– A refreshing, light, and yummy salad that can be eaten as a side, used as a dip for crunchy pita chips or placed in a wrap (maybe with baked falafel?).
  3. Baked Spicy Sweet Potato Tots with Chipotle Aioli– These sweet potato tots are baked instead of fried, and filled with tons of Vitamin A; pair it with a chipotle sun-dried tomato aioli and you’ve got a winning combination!
  4. Squash Queso Dip– I can’t say that this dip is particularly cheesy, but it definitely has some great color and flavors. Plus, what is a get-together without dips?
