Buffalo Chickpea Ranch Pizza

To tell you the truth, I’ve been trying to get this recipe out to you guys for MONTHS! Now, I’m so glad that I finally have the time to share it. Of course, you know how much I love the Chickpea/buffalo sauce/ranch combo as shown by this mac recipe and this nacho recipe. So naturally I had to add to this delicious food family by making a pizza version!

I actually made this twice, once as an experiment for a friend and I, and a second time to nail down all of the measurements. I could easily eat this pizza once a week, or maybe more depending on how many feels I have. ;) Each person that got their hands on a slice may agree with me, as it got rave reviews!

You really can’t go wrong with a combination like spicy buffalo sauce, crunchy celery, chickpeas, fresh cilantro, peppery arugula and a vegan ranch sauce that some readers claim to be the best they’ve ever had! Believe me, I take that as a huge compliment, as I’ve tasted many a delicious vegan ranch in my foodie adventures.

Aside from this fabulous pizza pie, I’m pretty excited to bring back some more creative recipes to Vegan Yack Attack. Will there still be plenty of cookbook reviews and giveaways? Of course! But, now I have the time to give you some breaks from those types of posts with some crazy recipes. Oh, have you heard? Vegan MoFo is back in September and you better believe that shit is going to get REAL!

So, go ahead, make this jaw-dropping pizza for your friends and family and get them excited about some solid vegan eats. :)

Raw Plum Banana Cheesecake

When I think of summers past, August never was a very busy month for me. Usually it was the winding down of a Summer break, when I was in school, or a month where there was some preparing for Back-to-school products at the full-time jobs that I had. Otherwise, there was just the heat, and a few activities that I had to take up my time.

Fast forward to this August, where there is a TON of stuff happening! One thing that comes to mind is the prepping for next month’s Vegan MOFO, which is always exciting and slightly stressful. It’s a great time to stretch your imagination and learn about some amazing new bloggers.

Then, there are all of these events to go to in Southern California! Don’t get me wrong, I’m not complaining, this is super awesome. This week I’m going to a “release party” of sorts, for Follow Your Heart’s new cheese shreds (yum!). Plus, some vegan potlucks, working a music festival (as a merch lady, of course), and most of all, birthdays. Next week I may be helping out Fran & Kate for Fran’s new cookbook trailer, hell yeah!

This past weekend was my dad’s birthday, which means, time for carrot cake! Usually, my mom buys a non-vegan carrot cake to share with the rest of the family, but we decided that I would make some mini-cakes with my new mini springform pans for us. I’m still tweaking the recipe, which is a lighter version of one that I used a couple of years ago. We shared one of the mini-cakes after a dinner of Chinese take-out (classy, no?), and it really hit the spot.

Unfortunately, our amazing weather has decided to actually become Summery, so temperatures have risen about 10-15 degrees. Naturally, I’m trying to stay away from the oven, so I’ve utilized my mini cake pans once again and made some raw cheesecake for you! Raw desserts are some of my favorite to make because it usually consists of soaking, blending, pressing and freezing. Then, ta-dah! A beautiful and healthier dessert for you to (maybe) share with your loved ones. ;)

Mini Pizza Pies!

It’s Sunday, and I am worn out. I feel like that’s pretty common amongst most people, though. Work during the week, get other things done on the weekend, then end up tired at the end of it all before you have to start on the Monday grind, again. Kind of dreadful, huh? Although, today I’ve been working on a delightful little recipe for you all, so I can’t complain too much about being tired!

But first, I would just like to mention that I went sailing for the first time, on Saturday. It was super last-minute, but a very fun experience, that makes me feel extremely lucky to live where I do. We had a hot weekend in Southern California, which I honestly was pretty bitter about (I like cool weather!), but the winds made for a perfect sailing situation. It did get a little chilly when the sun was going down, but it was pretty terrific and the scenery and sunset were gorgeous.

Which is why I may have procrastinated on creating a recipe that I wanted to get done yesterday, oops. Never the less, I am really excited to share with you these delectable morsels that I have dubbed Mini Pizza Pies. Plus, I’ve tried out something new with my cashew spread! I have made it even healthier, by substituting a good amount of cashews with steamed cauliflower; and I assure you, nothing has been lost in this switch. The texture is pretty incredible and still very creamy and rich, success!

These little pizzas would be great served as an appetizer at a party, or even just served as dinner. They’re a fun, little dish that is very kid-friendly, and even more adult-friendly. ;) The fluffy, homemade crust can’t be beat!

Back to Basics Fruit Pie

It’s only the 9th and this month has already been a bit crazy and busy. Like I mentioned in my last post, I wont be able to blog very frequently this month, so I am going to have a few more great guest bloggers stop by and show off their awesome recipes and photos. Luckily, between shooting photos and a dentist appointment, I was able to make this ridiculously easy, delicious and healthy pie!

We’re getting into citrus season now, which is awesome for me because I have a few citrus trees in my backyard. Well, one of the trees in is my neighbor’s yard that spills into mine and I may or may not have snuck a few tangerines from it for this recipe. ;) Hey, they don’t eat them anyway!

Anyway, I figured that I would make a dual personality pie with the seasonal produce I had hanging out on my counter, meaning that you can leave this pie raw or enjoy a slice after baking it. Crisp gala apples, soft sweet persimmons, and slightly sour tangerines make up this simple pie; the contrast in flavors and textures creates quite the party in your mouth. A gluten-free almond/date crust makes up the base for the fresh fruit, and has a great crunch to it!
