One thing I can definitely say about these cupcakes is that they were DELICIOUS, I was trying to find any excuse to eat the frosting; whether it be on crackers or blueberries, it turned me into an addict. The coconut flavor in the frosting is very subtle but if you don’t like coconut you will definitely be able to taste it, as I learned from a few people after the fact.
The chocolate cupcake recipe came from Allrecipes, except that I substituted the oil with applesauce and sugar with agave nectar; although, next time I’ll use half agave and half sugar for the sake of taste.
For the frosting I used a recipe from My Vega, and I made a larger quantity although it was probably not necessary. It was SO yummy, and I felt much better about eating it compared with “butter cream” frosting because there is more value nutritionally from the cashews.
