Fresh Fruit Bowl topped with Sweet Cashew Cream

I threw this lil’ ditty together with organic produce from my local farmers market. Unfortunately, I didn’t have the forethought to soak the cashews for longer, but it tasted delicious either way.


1 Small Fuji Apple, chopped

1 Cup Cut Strawberries

1/2 Cup Blueberries

1/4 Cup Soaked Cashews

1 Tbsp. Maple Syrup (I use Grade A)

2 Tbsp. Almond Milk


Place all cut fruit in a bowl. Take soaked cashews, maple syrup and almond milk and blend until creamy. Top your fruit with the cream and toss until it is evenly distributed, or dip your fruit chunks into it. This is a seriously easy dish, with lots of nutrients and amazing flavors.
