Here’s another option for your leftover Slow Cooker beans (there’s going to be plenty left over if you’re the only one eating them!), make lettuce tacos out of them! Lettuce is a great substitute for tortillas because it’s low carb and will not sit in your stomach making you uncomfortable for the next few hours.
Here I filled 3 Lettuce “shells” with 1/3 Cup of the cooked beans, then shredded carrots and zucchini over them. I then topped them with a bit of nutritional yeast for that savory flavor, avocado slices and some cholula (I am known for loving hot sauce, you can omit this if you have a more mild palette). Then chow down, and enjoy this healthy meal!
