Grilled Corn Salad
Today I have two great, and easy recipes for salads that make great side dishes during the summer! For the first one of the day we have a sweet corn salad that is mild but has a lot of flavor. Not to mention I got to use the cilantro that I’ve been growing! Yay!
Ingredients:
6 Ears of Corn, with Husks
1 Cup Red Onion, diced
3 Tbsp. Fresh Cilantro, Minced Finely
Juice from 1 Lime
1/2 tsp. Sea Salt
Directions:
Take corn and pull off all of the husks, minus the first layer, and chop off the husks. Rinse them with cool water and grilled them until the color in the corn becomes vibrant and the husks are charred. Leaving this thing layer of husk on guards the corn kernels from being burnt, but also allows some of the smokey, grilled flavor to come through.
Once they are done, pull the husks off and remaining silk, and cut off the kernels into a large bowl. Mix in red onion, cilantro, lime juice, and sea salt to taste. After they are combined you can either serve as is, or microwave the entire bowl for about a minute so that the flavors meld together a little more.
