When I was looking through twitter the other day, I found a delicious sounding recipe from One Green Planet for Curried Lentil soup. I am a HUGE fan of nearly anything with curry in it and I had just bought some dried lentils a few days prior, so it was obviously meant to be. 😉 This recipe is pretty huge and you’ll get quite a few portions out of it, so make sure to use a large pot!
I made a few changes to the recipe, mainly because there wasn’t enough spice in it for the quantity of soup. So, my recommendations are to use 3 tbsp. Bragg Liquid Amino, 1 1/2 tbsp. Curry Powder, 1 tsp. Turmeric, 3 cloves of garlic, and one large white onion instead of the stated measurements. It’s a delicious and filling soup that is really not hard to make, try it out for yourself! 🙂
