These Raw Zucchini Squash Sandwiches are an easy and super-healthy snack that are especially refreshing on a hot summer day!
This dish makes a great lunch or dinner, and you can really customize it to whatever veggies you have on hand. The squash is FROM MY GARDEN (and huge), and for the filling I used Homemade Sprouted Chickpea Hummus, sugar snap peas, tomato slices, and fresh basil with a lil’ sea salt and ground pepper for seasoning. It was incredibly satisfying and nutritious!
Edit: This has become a fantastically popular recipe over the years, to my surprise! So, I’ve finally formatted a rough recipe for you, below. You’re welcome to use store-bought hummus, as opposed to the raw hummus, for convenience-sake!
- 8 thick slices large zucchini
- 1 cup sugar snap peas
- 4 thick slices tomato
- 1/2 cup raw hummus, link above
- 2 tablespoons basil leaves
- Salt & Pepper, to taste
- Lay out four slices of zucchini and divide ingredients between each round. Top with remaining zucchini slice and serve, or chill until serving.

This recipe would even be great with cucumber instead of zucchini, or you could add thinly sliced radishes and a little mint to change it up.
