Starters and Snacks
Now, I've been known to go a little later than planned with getting dinner on the table, so it's always a good idea to have some snacks available for your guests!
Fondue makes for a fun appetizer to be shared among friends, whether for a dinner party or a game night! This creamy, low-fat, fondue is a delicious crowd-pleaser, especially with its beer-tinged aroma. Reprinted from Vegan Bowl Attack, with permission of Fair Winds/Quarto Publishing. Copyright 2016
"When I was a kid in Michigan, ordering crab rangoon was a staple for the table when we went out for Chinese food. When I moved to NYC, I remember being so disappointed to discover this was not a typical item on Chinese menus. Needless to say, it was my mission to re-create these for very personal reasons. Hearts of palm give it the texture usually provided by the crab, but let’s face it, it’s that luscious cream cheese with the crunchy wonton everyone loves!" "The vegan restaurant of my dreams serves this Spinach Artichoke Dip piping hot with chips and crisp vegetables. Until I find that restaurant, I will make my own. Soaked cashews and vegan cream cheese give this dish an extra-creamy base, while nutritional yeast and vegan parmesan cheese add plenty of rich, cheesy flavor. My favorite way to enjoy this dip is with tortilla chips. However, toasted baguette and vegetables are delightful as well."
This warming, easy-to-make soup is perfect for sustaining you through winter, and for making big batches of to save for later! Plus, the curry-roasted seeds and squash chips add wonderful texture to this silky-smooth soup.
"Growing up, shake and bake was a thing, and if you’re not familiar, that may make you luckier than I. It was exactly what it sounds like: shake things in a bag and bake them, though the ingredients were questionable. Here you can make your own version, but with Brussels and bacon – two of my favorite “b” foods." Recipe shared with permission by Quarto Publishing, Copyrighted 2018 Vegan Yack Attack on the Go!
"Sometimes, you just need a recipe that you can set and forget. My mother used to make slow cooker dishes all the time, when I was younger – a lot of which were roasts of some kind. So, I took a note from her playbook, and made my delicious seitan round into a beautiful, hearty slow cooker roast." Recipe reprinted from Vegan Yack Attack On the Go! with permission. If you need a show piece for your holiday table, I have got you covered! I worked with Earthbound Farm to put together this gorgeous and delicious Stuffed Kabocha Squash Centerpiece that’s great for any special fall occasion.
Sometimes you just need a comforting dish with nostalgic feels to really hit the spot. This batch of vegan cheesy sweet potato pierogi is exactly that! And even better when topped with the optional caramelized onions.
"The best part of the holidays? All the sweet treats! The worst part of the holidays? All those damn sweet treats! Save the sugar for the cookies and make this naturally sweetened, rich, creamy Holiday Nog to satisfy your sweet tooth instead. It's free of eggs and much lighter than the original--guilt-free, too!"
