One of the food-related things that I love about the holidays are the awesome breakfasts and brunches. There have been times where I’ve gone all out for the brunch and laid low for the dinner, but this year I think I’m going to do the opposite. Now, this doesn’t mean that you, or I for that matter, need to have a boring first meal of the day. That’s where this filling dish comes in!
Getting its name from a very popular ice cream flavor, this chunky monkey baked oatmeal boasts sweet bananas, chopped walnuts and sweet chocolate with a vanilla oatmeal base. As neat as it would be to eat ice cream for breakfast I feel that this version is going to get you a whole lot further and you won’t have a crazy comedown from your sugar high.
Besides that great flavors that this dish brings to the table, another good quality is that you prep it and leave it alone. No tending to it, making sure that nothing is burning or worrying about it thickening up enough. Just pulse most of the ingredients in a blender, pour it in and bake! Easy-peasy, right? Then you can get crazy with the toppings and serve it right up with a warm cup of coffee, or tea if that’s your thing.

Chunky Monkey Baked Oatmeal
This baked oatmeal is a terrific and easy holiday breakfast inspired by Chunky Monkey Ice Cream!
Ingredients
Oatmeal
- 1 C . Water
- 1 C . Non-Dairy Milk
- 1 C . Very Ripe Banana, Broken Into Chunks
- 1/4 C . Coconut Sugar
- 1-2 T . Maple Syrup
- 1 T . Ground Flaxseed
- 1 1/2 tsp . Vanilla Extract
- Pinch of Salt
- 2 C . Rolled Oats, Gluten-free
- 1/4 C . Walnuts, Chopped
- 3 T . Vegan Chocolate Chips
Topping
- 1/2 C . Banana, Sliced
- 2 T . Walnuts, Chopped
- 1 T . Chocolate Chips + 1 tsp. Hot Water, Stir together for simple chocolate sauce
Instructions
- Preheat oven to 350F.
- Place water, non-dairy milk, 1 C. banana, coconut sugar, maple syrup, flaxseed, vanilla extract and salt into a blender and pulse for 10 seconds.
- Next, add the oats, walnuts, and chocolate chips to the blender and pulse a couple of times to mix them in (or stir together if you think you might puree it on accident).
- Pour the mixture into a high-walled, round, 7-8" baking dish. Top with a couple of banana slices if you feel so inclined.
- Bake for 45 minutes, making sure that the top and edges are golden brown.
- Top with freshly sliced bananas, walnuts and chocolate drizzle. Serve hot, and add a little maple syrup over the top for extra sweetness. Enjoy!

I would say that it’s pretty dang healthy! Maybe not the absolute healthiest, but I feel that it’s a good compromise. 😉
That looks delicious! I love baked oatmeal. I’ve been on a slow cooker steel cut oats kick but this recipe is begging to be made ASAP!

Thank you for opening my eyes to baked oatmeal! I made the Chunky Monkey this morning after getting the blog notification. I can’t say I crave the flavor combo but as I drank my coffee and stared at a bowl of overripe bananas I really didn’t relish making more banana nut muffins. Plus, for once I had all the ingredients on hand! After my second bowl (and even more amazingly watching my husband take a second bowl) I have to admit it is brilliant. I will probably play with it next time with apples, nuts, cranberries and citrus (like the pancakes you recently posted about that I need to buy orange juice for).

I would say yes, you’d probably need to up the amount of liquid and the baking time, though. 🙂

You can! You would just need to lessen the amount of other liquids in the recipe. 🙂

I made this early this mornings and am eating it right now. So good I was inspired to comment. Great recipe. I used Chia seeds instead of flax, all water because I am out of milk, and a few more chocolate chips. Totally delicious!
