One of the food-related things that I love about the holidays are the awesome breakfasts and brunches. There have been times where I’ve gone all out for the brunch and laid low for the dinner, but this year I think I’m going to do the opposite. Now, this doesn’t mean that you, or I for that matter, need to have a boring first meal of the day. That’s where this filling dish comes in!

Getting its name from a very popular ice cream flavor, this chunky monkey baked oatmeal boasts sweet bananas, chopped walnuts and sweet chocolate with a vanilla oatmeal base. As neat as it would be to eat ice cream for breakfast I feel that this version is going to get you a whole lot further and you won’t have a crazy comedown from your sugar high.

Besides that great flavors that this dish brings to the table, another good quality is that you prep it and leave it alone. No tending to it, making sure that nothing is burning or worrying about it thickening up enough. Just pulse most of the ingredients in a blender, pour it in and bake! Easy-peasy, right? Then you can get crazy with the toppings and serve it right up with a warm cup of coffee, or tea if that’s your thing.

This baked oatmeal is a terrific and easy holiday breakfast inspired by Chunky Monkey Ice Cream!

Ingredients

Oatmeal

  • 1 cup (235 ml) water
  • 1 cup (235 ml) non-dairy milk
  • 1 cup (210 g) very ripe bananas, chopped
  • 1/4 cup (35 g) coconut sugar or light brown sugar
  • 1-2 tablespoons (15-30 ml) maple syrup
  • 1 tablespoon (7 g) ground flaxseed
  • 1 1/2 teaspoons vanilla extract
  • Pinch of salt
  • 2 cups (180 g) rolled oats, gluten-free if necessary
  • 1/4 cup (25 g) chopped walnuts
  • 1/4 cup (40 g) vegan chocolate chips

Topping

  • 1/2 cup (100 g) sliced banana
  • 2 tablespoons (13 g) chopped walnuts
  • 1 tablespoon (10 g) chocolate chips + 1 teaspoon hot water, stir together for simple chocolate sauce

Instructions

  1. Preheat oven to 350F.
  2. For the oatmeal, place water, non-dairy milk, 1 C. banana, coconut sugar, maple syrup, flaxseed, vanilla extract and salt into a blender and pulse for 10 seconds.
  3. Next, add the oats, walnuts, and chocolate chips to the blender and pulse a couple of times to mix them in (or stir together if you think you might puree it on accident).
  4. Pour the mixture into a high-walled, round or oval, 7-8" baking dish. Top with a couple of banana slices if you feel so inclined.
  5. Bake for 45 minutes, making sure that the top and edges are golden brown.
  6. Top with freshly sliced bananas, walnuts and chocolate drizzle. Serve hot, and add a little maple syrup over the top for extra sweetness. Enjoy!
