Berry Pineapple Belgian Waffles

These Berry Pineapple Belgian Waffles are subtly tropical and topped with fresh berries, plus they come together in minutes!

Phew! It seems as though I’m done with the photography for the latest Happy Herbivore book. Now, I’m just waiting on the shot list for the next book that I’ll be working on! Exciting stuff, and in the meantime I’m happy to get a blog post in. Since I haven’t done a ton of my own recipes in the last month or so, it’s almost feeling a little foreign. Almost.

I was glad to be in the kitchen, playing around with a waffle recipe from my past AKA last year. But, I wanted to simplify it and change the flavors around. As much as I love making a production of breakfast dishes, I tried to make this a quick waffle recipe that’s a crowd pleaser. Whenever I want to make sure the general public would like something, I feed it to my S.O. Mostly because he’s not vegan and has no filter when it comes to his opinion.

The end result was delicious! Corey ended up having 3 waffles for the first test-batch and he really liked them. The pineapple flavor is really subtle and the cool, fresh berries pair wonderfully with the warm, crunchy waffles. Top it off with a small drizzle of maple syrup or agave nectar and you have a winning breakfast.

Of course, you can add some pineapple chunks to the berries on top, to really pump up the tropical flavor of these. I just didn’t have any on hand! 😉 Feeling fancy? Add some orange or lemon zest to the waffle batter!

Berry Pineapple Belgian Waffles

Yield: 2 (4 Waffles)
Prep Time: 5 minutes
Cook Time: 18 minutes
Total Time: 23 minutes

Subtly tropical waffles topped with fresh berries, that come together in minutes!

Ingredients

Waffles

  • 3/4 cup Pineapple Juice
  • 3/4 cup Non-Dairy Milk
  • 1 tablespoon Olive Oil or other Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1 1/4 cups Unbleached All-Purpose Flour
  • 1/4 cup Rolled Oats
  • 1 1/2 tablespoons Organic Sugar
  • 2 teaspoons Baking Powder
  • Pinch of Salt
  • tsp Optional: 1/2 . Orange or Lemon Zest

Toppings

  • 1 cup Blueberries
  • 1 cup Strawberries, Sliced
  • Optional: Dollop of Yogurt, Maple Syrup, Agave Nectar

Instructions

  1. Warm up your Belgain waffle iron.
  2. Place all waffle ingredients into a blender, in order of the list, and puree until just smooth.
  3. Test the temperature of your waffle iron by seeing if a drop of water sizzles once it hits the iron. Then, pour the batter over the iron, and fill in the gaps, work quickly.
  4. Close the iron and cook for 7-10 minutes depending on the iron and how crispy you'd like them.
  5. Carefully remove the waffles from the iron and separate them with a knife. Repeat steps 3 & 4. Serve the waffles warm, with fresh fruit on top.

Oh my gosh could these BE any more beautiful?? You're doing an equally good job selling me on a square waffle maker as you are the waffles :) I am recently newly obsessed with waffles thanks to some truly amazing liege waffles...have you ever had them? If you could figure out a vegan liege waffle recipe you would be my hero for LIFE. (But these pineapple waffles are also pretty exciting. Can't wait to try them!)

Omg, I just looked up those Liege Waffles and they sound INCREDIBLE! I'm so glad that I saw your post about pearl sugar, because I was wondering, where the hell am I going to get that? I'll have to put that recipe on my to-do list, for sure! :)
