I took a vegetarian cooking class tonight with my mom, four dishes and they were all so good! The wine didn’t hurt at all either. Let me know if you’re interested in any of the recipes!
Mixed green salad and quinoa with broccoli, leeks, mushrooms, and tofu.
Miso soup with tatsoi, kelp noodles, tofu, leeks, green onions, and mushrooms + sriracha. Yum.
Made this recipe for Savory Kabocha Tofu Pie tonight, and it came out AMAZING. I did add about 2 cups spinach and a little more garlic to it, it was really good and pretty easy to make (if I do say so myself). I also used a pre-made, whole wheat pie crust from Sprouts.
