  • Pinch of salt
  • 3 tablespoons chia seeds

Mint Pudding

  • 1/2 cup unsweetened non-dairy milk
  • 1/4 cup baby spinach firmly packed
  • 1/4 cup fresh mint firmly packed
  • 1 1/2 tablespoons coconut sugar
  • Pinch of salt
  • 3 tablespoons chia seeds

Instructions

Chocolate Pudding

  • Put all of the chocolate pudding ingredients into a blender, except for the chia seeds and puree until smooth.
  • Place the chia seeds in a small bowl, then pour the chocolate mixture over them and whisk until combined. Chill in the refrigerator for 45-60 mins, and stir every 15 minutes for consistent "gelling".

Assembly

  • Once both puddings are of a pudding or jelly-like consistency, take them out of the refrigerator. Get two skinny jars or cups out and layer the puddings by carefully placing 3-4 tablespoons of each flavor on top of one another.
  • Sprinkle some cacao nibs on each chocolate layer for an added crunch, and garnish with cacao nibs and mint leaves, if you desire. Serve chilled.
