Preheat a waffle iron to medium high heat. In a small bowl, whisk hot water and flaxseed together. In a large mixing bowl, stir together stuffing and flaxseed egg, until combined.
Pack the stuffing into a large Belgian waffle maker, or split the stuffing mixture in two for a regular waffle maker. Cook for 8-12 minutes, depending on the size of your waffle maker, and how wet the stuffing is. Waffles will be done when most of the steam has subsided.
You may want to cook the waffle longer, if you like it on the crispier side. Top with a scoop of mashed potatoes and drizzle gravy over the top! Serve while hot.
