Thanksgiving Leftover Recipe: Stuffing Waffle with Gravy

  • 1/3 cup hot water
  • 2 tablespoons ground flaxseed
  • 3 cups vegan stuffing
  • 1 cup mashed potatoes
  • 1/2 cup gravy


  • Preheat a waffle iron to medium high heat. In a small bowl, whisk hot water and flaxseed together. In a large mixing bowl, stir together stuffing and flaxseed egg, until combined.
  • Pack the stuffing into a large Belgian waffle maker, or split the stuffing mixture in two for a regular waffle maker. Cook for 8-12 minutes, depending on the size of your waffle maker, and how wet the stuffing is. Waffles will be done when most of the steam has subsided.
  • You may want to cook the waffle longer, if you like it on the crispier side. Top with a scoop of mashed potatoes and drizzle gravy over the top! Serve while hot.
