Creamy Green Bean Potato Soup

Ingredients

Soup

  • 1 teaspoon sunflower oil
  • 1 shallot minced
  • 2 cups mashed potatoes
  • 1 1/2 cups green bean casserole
  • 1-1 1/2 cups vegetable broth
  • 2 tablespoons nutritional yeast

Toppings (optional)

  • 1/4 cup coconut bacon
  • 1/4 cup fried onions
  • 1/4 cup cashew cream or vegan sour cream
  • 2 tablespoons diced green onions

Instructions

  • For the soup: Heat oil in a soup pot over medium heat, once hot sauté shallot for 2 minutes. Add potatoes and green bean casserole to the pot, followed by the vegetable broth and nutritional yeast. Bring it to a boil, then adjust heat to medium-low, simmering uncovered for 15 minutes, stirring occasionally. 
  • Once the soup has thickened and the potatoes are broken up, creating a creamy soup, divide soup between 4 small bowls. Top each with coconut bacon, onions, cashew cream, and green onions, or whatever toppings you're into!
