Chocolate-Covered Strawberry Oatmeal

I know exactly what you’re thinking right now, “Oatmeal has to be the sexiest food on the planet!” Oh, no? That’s not what you were thinking? Maybe I can change your mind with some word play. Here are some reasons as to why you should indulge in this indulgent oatmeal dish for V-day (or any day, really): This oatmeal is rich and creamy, with cocoa running all through-out and a smooth mouth feel. Each bite is a luscious treat, with a little surprise from small pieces of tart, warm strawberry…

And it only takes about 8 minutes to put together. I’m pretty sure that’s the sexiest part! ;) Of course, you can double up this recipe and share it with someone you think fondly of, or perhaps even loooove. Yes, I’m a child. Either way, I think V-day is a cute reminder to indulge in some fantastic food and have a good time with loved ones, whether they be your friends, family or significant other.

So, forget the double-boiler for the chocolate, and make this one-pot meal to start your day of romance and self-love off right!

A Trio of Brunch Beverages

So, it’s Thursday evening where I’m at, which means that tomorrow is Friday and that we are almost to the weekend (YAY!). Now, this weekend is going to be busy for many people; visiting family and friends, doing Easter activities, etc. This is the post that gets you through all that, or at least gives you something to celebrate the end of the weekend with.

For as long as I remember, mimosas have been my mom’s choice of brunch beverage, which totally fits the bill of what a morning drink should be. My dad? Bloody Marys. Believe me, I’ve become a pro at making them; and now that I have vegan Worcestershire sauce, it’s all good! But, I think it’s time to switch things up a bit. Time for some refreshing beverages, where the alcohol is optional but a very welcome addition. 

Maybe next time, I’ll try my hand at doing a more savory drink; but at this moment in time, I’m feeling the sweet breakfast drink, even if subtly so. The cool combination of cucumber, mint and melon make that juice perfect for waking up. Just take it outside and enjoy in some sun (if it’s sunny where you are), or bring it to your computer desk and look at picture of the beach and transport yourself away. Perhaps a soundtrack of waves crashing would help? ;)

Okay, so one of these isn’t really something that you can drink over and over- I’m looking at you beer float- but hey, go for it! I see it as more of a dessert for the end of the brunch. You can easily make this non-alcoholic by using a suitable Strawberry Soda, and if you can’t find a Strawberry Ale, a wine cooler or malt beverage of the strawberry variety would suffice. 

The Blueberry Thai Basil, is really a mojito made over; but, the only thing that remains the same is the use of lime juice and rum. I’ve made this drink fresh and light with sparkling water, seasonal produce and a touch of agave. This is the sophisticated drink of the bunch, so serve it to someone fancy. If that person doesn’t drink, then just leave out the booze! It tastes just as good without.

Raw Easter Cookies

It has been a while since I’ve done a raw recipe, and what better way to usher in the new season than with some easy-to-make, fruity, raw cookies? I have to admit, there are some ingredients that aren’t completely raw; such as vanilla extract and store-bought raisins, but they’re nearly there! 

Also, here is some surprise news that I’ve been waiting to share with you, and now is the time. In January, I mentioned that I was working on a large project that I was very excited about; no, it’s not a cookbook of my own, BUT it is someone else’s. You may have heard of her and her brand Happy Herbivore. :) I was fortunate enough to take a majority of the pictures in her newest cookbook, “Happy Herbivore Light & Fit“! The book will be officially on the market in the fall, but is available for pre-order now. I am so, so elated about having my work published, and I can’t wait to get my hands on a copy.

Now, that we’ve got that covered, I can tell you about these tasty and festive cookies. I shaped them like eggs for the sake of Easter and having them in a basket, but flower shapes would be great, too! Maybe daisies or tulips? Each cookie has minimal ingredients in it and really couldn’t be easier to make and/or eat. ;) I used a dehydrator to keep these as raw as I could, but if you don’t have one, you can bake these on a low-temp. setting in your oven for a couple of hours.

All of the flavors are fresh and fun: Strawberry Mint, Berry Vanilla and Pseudo-Carrot Cake Cookies. I even tested these flavors out on my omnivore parents and got their approval. Not really necessary, but always appreciated. These recipes also work if you want to make Lara Bar-like snack bars, for on the go!

Sweet Vanilla Fruit Smoothie & A Trip to San Francisco

It seems as thought it’s been quite a while since my last post (at least for this site), and I have a good reason for it! In the midst of being busy with recipes and freelance photography, my boyfriend told me that he had just found out this past weekend he’d be heading up to San Francisco for some work. He then asked if I would like to go with him, because I’ve never been there before, but also because he needed someone for the HOV lane. ;) Mind you, this was about a day and a half before we needed to leave; talk about having no time to prepare for being gone for nearly a week!

We started making our way from Southern California to Northern, barely making it out of LA county because of the insane summer traffic. Hot temperatures for the entire length of the Grapevine had us sweating in our seats, due to a faulty air conditioner. Despite it taking nearly 8 hours to get there, we made it! Then, Corey decided to take a short detour before we headed somewhere to eat, at this point I had no idea where we were going. Sometimes he’s sneaky.
