There are not many things better than enjoying fresh, local strawberries on Labor Day! This is one way to start your day with a filling, healthy breakfast that is simple to make and comforting to your taste buds.
Ingredients (Serves 1):
- 1/2 Cup Rolled Oats
- 5 Strawberries, Sliced/Chopped
- 2 Tbsp. Chopped Pecans
- 1 Tbsp. Ground Flaxseed
- 1 Tbsp. Unsweetened Coconut Flakes
- 1/2 Tbsp. Agave Nectar or Maple Syrup
- 1/2 tsp. Vanilla Extract
- 3/4 – 1 Cup Hot Water or Non-Dairy Milk
Directions:
Put oats, strawberries, flaxseed, and coconut flakes into a bowl and toss together. Mix agave, vanilla and hot water together and then add to the dry mixture. Either let the oatmeal sit to soak up the water or assist it in a small pan over low heat, or microwave it! 🙂
