It has been SO long since I’ve had a sandwich and for whatever reason I have been craving a piece of bread lately and this light sandwich was a perfect fit. Using the Raw Chickpea Hummus that I made the other day as a spread, I chopped up some carrots, and leftover broccoli stalks that I had and topped them with cucumber slices and put them in between two pieces of toasted whole wheat bread. Yum!
